Job Title:                              Sous Chef

FLSA Status:                        Salary

Reports To:                        Kitchen Manager

 

The Sous Chef's main responsibility is to perform multi-functional culinary duties related to food preparation including set-up, service, and clean up. The position will lead daily operations of food preparation and be responsible for training and coaching of associates to ensure competency and that food safety practices are upheld in all areas. We desire a team player with good communication and decision making skills. Must be flexible and willing to work evenings, weekends, and holidays.

 

Job Description

 

ESSENTIAL RESPONSIBILITIES

  • Assist in the leadership of all kitchen activities; responsible for all kitchen staff members
  • Ensure company food safety and sanitation procedures are met at all times
  • Recommend food promotion ideas to Executive Chef
  • Check that coolers and freezers are clean; rotate stock
  • Take inventory; assist Executive Chef in completing sign in/out sheets, production schedules, labor cost worksheets, requisition sheets, and yield test
  • Requisition the proper amounts of products each day from receiving clerk
  • Work with the Banquet Manager, Catering Director, and Food and Beverage Director with regard to functions at The Marq
  • Prepare food for banquet functions/catering and cafeterias
  • Fill in for Executive Chef when he/she is gone
  • Other duties as assigned

QUALIFICATIONS

  • Wisconsin Sanitation Certification
  • Experience in supervising kitchen staff
  • Experience with inventory, ordering and maintenance of kitchen equipment
  • Passion for service and uncompromising desire to serve the highest quality food
  • An understanding of financial reporting
  • Strong written & verbal communication skills
  • Vision with or without the help of eyewear & sense of hearing required
  • Reading & math skills required

 

PHYSICAL DEMANDS AND WORK ENVIRONMENT

 

  • Ability to stand for most of shift, tolerate temperature extremes, lift & carry up to 60 pounds and push carts of up to 200 pounds
  • Able to handle high stress levels

 

WORK SCHEDULE

  • The Sous Chef is a full-time salaried position
  • The work schedule will include mornings, afternoons, evenings, weekends, and holidays
  • The catering business functions 365 days a year, 24 hours a day, it may be necessary to move an employee from his/her accustomed shift as business demands
